I learned of these recipes through pals on Twitter @ravenme and @michaelsigler. With only 140 characters they both conveyed some delightful and festive treats. I played around a little and documented my successes. Here is what tastes groovy to me. Please feel free to experiment!
Raven’s Guac:
Food process:
3 avocados - peeled/pitted
2 jalapenos - minced
1 tub of pico de gallo - drained
1 tsp garlic salt
3 Tbs of lime juice
(Raven suggested (and I prefer) a slightly chunkier guac so blend only 1/2 of the tub pico de gallo w/ the rest of ingredients. After blending stir in the rest of the tub.)
Mike’s Salsa
Food process:
2 – 14.5 oz cans of stewed tomatoes (I used Mexican style from Freddy’s)
½ medium yellow onion
1 big clove of garlic
1Tbs diced jalapenos (about 1-2 jalapenos)
1Tbs diced Cilantro
1 Tbs - lime juice
½ tsp – cumin
¼ tsp – salt
Mike is a wildman with a tongue of steel…..and added 2 small cans of green chilies, the whole onion and 1-2 habaneros.
